Healthier Holidays with Lighthouse Community Wellness

In November 2019 I spoke with Jaimie Moerbe, FNTP at Lighthouse Community Wellness on healthier holidays.  We discussed healthy eating mindset, gut health, blood sugar balance, navigating holiday events and traveling tips.  I demonstrated a “healthier” holiday sweet potato recipe filled with good quality fats and protein, while Jaimie mixed up a refreshing immune boosting mocktail!

Simple Meal Prep Demo Night

In October 2019 I hosted a nutrition evening to demonstrate simple meal planning.  I chose very practical dishes for what busy moms could accomplish in one hour.  We also discussed health benefits of the dishes and how to pair complimentary foods together to get the most nutritional impact.  I received multiple pictures the following days of participants making the dishes in their own kitchens!

Meal Plans for New York Times Bestsellers

During my time with Amy Myers MD, I had the privilege to create a meal plan with her for her first New York Times Bestselling book, The Autoimmune Solution.  This project was near and dear to my heart since it was the program that we used daily with our patients to get to the root of their autoimmune conditions.  

In 2016 we were at it again for Dr. Myers’ second New York Times Bestselling book, The Thyroid Connection.  Similar to The Autoimmune Solution meal plan, we created a practical guide for those with thyroid conditions to follow in pursuit of recovery and restoration.

Back in 2010 I worked with Rip Esselstyn and two fellow Registered Dietitians to create a meal plan based on Rip’s powerful New York Times Bestselling book, The Engine 2 Diet.  This meal plan was used at Whole Foods Immersion Programs to provide step by step guidance as team members became plant strong!
